Summer Fruit Crisp

Summer Fruit Crisp

Serves 6
This is summer in a bite to me. You can make a few hours ahead of time and bake 30 minutes before serving.


Ingredients

  • 1 cup blueberries
  • 1 cup blackberries
  • 1 cup raspberries
  • 3 cups peaches
  • 2 Tablespoons honey
  • ½ teaspoon powdered ginger
  • ½ teaspoon cinnamon
  • 1 ½ teaspoon arrowroot
  • 3/4 cup rolled oats
  • 1 ½ Tablespoons flour
  • ¼ teaspoon cinnamon
  • ¼ teaspoon powdered ginger
  • ¼ cup brown sugar
  • 3 Tablespoons butter melted


Directions

  1. Mix all of the ingredients together and place into a 11”x7” or 6 cup baking dish.
  2. Mix the oats, flour, cinnamon and ginger together in a small bowl. Stir in the melted butter. Crumble the topping evenly over the fruit.
  3. Bake at 400 degrees for 25-30 minutes. Serve warm with vanilla ice cream.
