Christmas Crisp with Apples, Pears and Cranberries

Serves 6
You can make a few hours a head of time and bake 30 minutes before serving.


Ingredients

  • 4 cups or 3 large Honeycrisp apples, peeled and diced ½ inch cubes
  • 3 cups or 2 pears, peeled and diced ½ inch cubes
  • 1 Tablespoon lemon juice
  • ¾ cup dried cranberries
  • 2 Tablespoons brown sugar
  • ¾ teaspoon powdered ginger
  • ¾ teaspoon cinnamon
  • 2 teaspoons flour
  • pinch of salt


Directions

  1. Mix all of the ingredients together and place into a 11×7 or 6, 2 cup baking dishes.


Topping

Ingredients:

  • 1 1/2 cups rolled oats
  • ¼ cup flour
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon powdered ginger
  • 1/2 cup brown sugar
  • 6 Tablespoons butter melted

Directions:

  1. Mix the oats, flour, cinnamon and ginger together in a small bowl. Stir in the melted butter. Crumble the topping evenly over the fruit.
  2. Bake at 400 degrees for 25-30 minutes. Serve warm with vanilla ice cream.
